Baked Pineapple with a Little Something Extra
With snow in the air this weekend, I decided to go domestic and make a dessert for the bf and me. I chose baked pineapple, mostly because I already had all the ingredients. At the last minute, I tossed in some mandarin orange segments and maraschino cherries for an added infusion of tropical sweetness. It turned out to be pretty refreshing, perfect for cabin fever snacking. (Of course, the vanilla ice cream on the side didn't hurt.)
